Caprese Tomato Delight

Simply delicious! With this recipe, our sun-ripened Caprese tomatoes turn into a tasty snack that will impress you and your guests. Give it a try!

Ingredients:

  • 4 SanLucar Caprese tomatoes
  • Leftover mashed potatoes from the previous day
  • 2 tbsp crispy fried onions
  • 50g grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh basil leaves (optional)

Preparation:

  1. Preheat the oven to 180°C (350°F).
  2. Cut off the tops of the tomatoes and scoop out the inside.
  3. Mix the leftover mashed potatoes with the crispy fried onions.
  4. Fill the tomatoes with the seasoned mashed potatoes.
  5. Sprinkle the grated Parmesan cheese over the stuffed tomatoes.
  6. Place the tomatoes on a baking sheet and bake for about 30 minutes, until the Parmesan turns golden and crispy.
  7. Garnish with fresh basil leaves if desired and serve warm. Enjoy!
