
Caprese Tomato Delight
Simply delicious! With this recipe, our sun-ripened Caprese tomatoes turn into a tasty snack that will impress you and your guests. Give it a try!
Ingredients:
- 4 SanLucar Caprese tomatoes
- Leftover mashed potatoes from the previous day
- 2 tbsp crispy fried onions
- 50g grated Parmesan cheese
- Salt and pepper to taste
- Fresh basil leaves (optional)
Preparation:
- Preheat the oven to 180°C (350°F).
- Cut off the tops of the tomatoes and scoop out the inside.
- Mix the leftover mashed potatoes with the crispy fried onions.
- Fill the tomatoes with the seasoned mashed potatoes.
- Sprinkle the grated Parmesan cheese over the stuffed tomatoes.
- Place the tomatoes on a baking sheet and bake for about 30 minutes, until the Parmesan turns golden and crispy.
- Garnish with fresh basil leaves if desired and serve warm. Enjoy!
