Lemon Tart

Ingredients:

For the crust:

  • 1 cup all-purpose flour
  • 1/4 cup powdered sugar
  • 1/2 cup unsalted butter, cold and cut into small pieces
  • 1/4 teaspoon salt
  • 1-2 tablespoons cold water

For the filling:

Preparation:

Crust:

  1. Preheat the oven to 175°C (350°F).
  2. In a bowl, mix the flour, powdered sugar, and salt. Add the cold butter and blend until the mixture resembles coarse crumbs.
  3. Gradually add cold water until the dough comes together.
  4. Press the dough into small tart pans, prick the bottom with a fork, and bake for 15 minutes. Let cool.

Filling:

  1. In a saucepan, mix the lemon juice, sugar, cornstarch, egg yolks, and water.
  2. Cook over medium heat, stirring constantly, until the mixture thickens (about 5-7 minutes).
  3. Remove from heat and stir in the butter and lemon zest until the butter melts. Let cool.

Assembling the tarts:

  1. Pour the lemon filling into the cooled tart crusts and spread evenly.
  2. Let set for at least one hour before serving.
