Pumpkin and Blueberry Muffins

Sweet comfort treats! When it’s gloomy outside, treat yourself and your loved ones to a sweet delight with these pumpkin-blueberry muffins. So good!

Ingredients:

  • 3/4 cup flour
  • 3/4 cup quick oats
  • 2/3 cup white sugar
  • 2 tsp baking powder
  • 3/4 tsp salt
  • 1/2 tsp ground cinnamon
  • 1/2 tsp nutmeg
  • 1/2 cup canned pumpkin puree
  • 1/2 cup milk
  • 1 egg
  • 1/4 cup melted butter
  • 3/4 cup SanLucar blueberries

Preparation:

  1. Preheat the oven to 200°C (392°F). Grease a muffin tin and dust with flour, or use paper liners.
  2. In a large bowl, mix flour, oats, sugar, baking powder, salt, cinnamon, and nutmeg.
  3. In a separate bowl, combine pumpkin puree, milk, egg, and melted butter.
  4. Add the dry ingredients gradually to the wet ingredients and stir until just combined.
  5. Fold in the blueberries.
  6. Fill the muffin cups completely with the batter.
  7. Bake for about 20 minutes, until the tops spring back when lightly pressed.
  8. Let cool slightly and enjoy the cozy flavor!
