
Pumpkin and Blueberry Muffins
Sweet comfort treats! When it’s gloomy outside, treat yourself and your loved ones to a sweet delight with these pumpkin-blueberry muffins. So good!
Ingredients:
- 3/4 cup flour
- 3/4 cup quick oats
- 2/3 cup white sugar
- 2 tsp baking powder
- 3/4 tsp salt
- 1/2 tsp ground cinnamon
- 1/2 tsp nutmeg
- 1/2 cup canned pumpkin puree
- 1/2 cup milk
- 1 egg
- 1/4 cup melted butter
- 3/4 cup SanLucar blueberries
Preparation:
- Preheat the oven to 200°C (392°F). Grease a muffin tin and dust with flour, or use paper liners.
- In a large bowl, mix flour, oats, sugar, baking powder, salt, cinnamon, and nutmeg.
- In a separate bowl, combine pumpkin puree, milk, egg, and melted butter.
- Add the dry ingredients gradually to the wet ingredients and stir until just combined.
- Fold in the blueberries.
- Fill the muffin cups completely with the batter.
- Bake for about 20 minutes, until the tops spring back when lightly pressed.
