Dazu haben Wissenschaftler am Diabetes Research Center der University of Leicester sechs Studien zu Obst und Gem\u00fcse mit Daten von 220.000 Erwachsenen ausgewertet. Schon eineinhalb Portionen pro Tag (etwa 106 Gramm) k\u00f6nnen die Krankheitsgefahr um 14 Prozent reduzieren, schreibt das Forscherteam um Patrice Carter im \u00bbBritish Medical Journal\u00ab (BMJ). Warum gerade gr\u00fcnes Blattgem\u00fcse \u2013 und nicht Obst \u2013 eine derartige Wirkung entfaltet, ist bisher nicht eindeutig gekl\u00e4rt. Die Wissenschaftler vermuten, dass dies mit Antioxidantien wie Vitamin C oder dem hohen Magnesiumgehalt des Gem\u00fcses zusammenh\u00e4ngen k\u00f6nnte. Zu diesen geh\u00f6ren Vollkornbrot und -nudeln, H\u00fclsenfr\u00fcchte, Gem\u00fcse und viele Milchprodukte. Nicht ratsam und ziemlich schwierig ist es, die Ern\u00e4hrung in erster Linie nach dem Glyx auszurichten. Gerichte bestehen in der Regel aus mehreren Zutaten, sodass sich der tats\u00e4chliche glyk\u00e4mische Wert dadurch schwer berechnen l\u00e4sst. Der Glyx einer Pizza zum Beispiel variiert je nach Belag, Teig und Herstellung.<\/p>\n<p>Allein wegen des Glyx muss also niemand auf bestimmte Lebensmittel verzichten. Der Blutzuckeranstieg l\u00e4sst sich au\u00dferdem durch den gleichzeitigen Verzehr g\u00fcnstiger Lebensmittel abmildern. Wei\u00dfbrot zum Beispiel f\u00fchrt zu geringeren Ausschl\u00e4gen, wenn es zusammen mit einem Salat gegessen wird. Noch besser w\u00e4re nat\u00fcrlich ein Salat mit Vollkornbrot.<\/p>\n<\/div><\/section><\/div><\/div><!--close column table wrapper. Daf\u00fcr ist es aber reich an Vitaminen, Ballast- und Mineralstoffen. Der Glyk\u00e4mische Index gibt an, wie hoch und wie schnell der Zucker im Blut ansteigt nachdem 50 Gramm Kohlenhydrate aus einem Lebensmittel verzehrt wurden. So ergeben 50 Gramm Glucose einen Glyk\u00e4mischen Index von 100 Prozent. Dies ist auch der Referenzwert.<\/p>\n<p>Beim Glyk\u00e4mischen Index gibt es jedoch eine Schwierigkeit. Nehmen wir das Beispiel Wassermelone. Bei der kalorienarmen Frucht liegt der Glyk\u00e4mische Index bei 72, ist also ziemlich hoch. Damit hat die Wassermelone sogar einen h\u00f6heren Wert als Wei\u00dfbrot. Wie kann das sein? Der Glyk\u00e4mische Index bezieht sich ja immer auf den Verzehr von 50 Gramm Kohlenhydrate aus dem Nahrungsmittel. Da Wassermelonen wenig Kohlenhydrate enthalten, m\u00fcsste man schon 800 Gramm dieser Frucht essen, um auf die Kohlenhydratmenge und zu dem Glyx von 72 zu kommen. Und das ist ja eher unwahrscheinlich. Daher gibt es die Glyk\u00e4mische Last, eine Erweiterung des Glyk\u00e4mischen Index\u2019. Der Wert der Glyk\u00e4mischen Last bezieht sich nun auf die tats\u00e4chlich verzehrte Menge eines Nahrungsmittels. Und so haben 100 Gramm Wassermelone nur noch einen niedrigen GL-Wert von 4,5. Uff, ganz sch\u00f6n kompliziert.<\/p>\n<\/div><\/section><\/div><\/div><!--close column table wrapper.
