Shrimp Ceviche

This tasty shrimp ceviche with our creamy avocado and refreshing lime and lemon juice is the perfect dinner. Light and delicious!

Ingredients:

Preparation:

  1. Heat a pan over medium heat and lightly sauté the shrimp until they turn pink and slightly golden. Let them cool and transfer to a bowl.
  2. Add the finely chopped red onion, cucumber, tomatoes, and green pepper to the shrimp.
  3. Season with salt, black pepper, cilantro, and mint.
  4. Dice the avocado by scoring the flesh and scooping it out. Add it to the shrimp mixture.
  5. Pour the freshly squeezed lemon and lime juice over the mixture, then add the fish stock.
  6. Gently mix everything together and let it marinate in the fridge for 30 minutes to allow the flavors to meld.
  7. Garnish with additional cilantro and serve chilled. Enjoy!
