You must slurp up this soup! This heavenly Gazpacho, made from our sun-kissed tomatoes and refreshing cucumbers, tastes like sunshine and the south – and is very easy to prepare.

  1. In a blender, combine the peeled and chopped tomatoes, cucumber, red onion, green bell pepper, garlic, bread pieces, olive oil, water, parsley, cilantro, basil, and ground cumin.
  2. Season with salt and freshly ground black pepper. Blend until smooth.
  3. Transfer the mixture to a bowl, cover, and refrigerate for at least 2 hours to enhance the flavors.
  4. Serve the cold soup in bowls and garnish with fresh basil leaves.
