
Gazpacho
You must slurp up this soup! This heavenly Gazpacho, made from our sun-kissed tomatoes and refreshing cucumbers, tastes like sunshine and the south – and is very easy to prepare.
Ingredients:
- 450 SanLucar tomatoes, peeled and chopped
- 1/2 SanLucar cucumber, peeled and chopped
- 1/4 SanLucar red onion, chopped
- 1/2 SanLucar green bell pepper, seeded and chopped
- 1 garlic clove, minced
- 1/4 baguette, cut into small pieces
- Salt and freshly ground black pepper
- 2 tbsps of SanLucar extra-virgin olive oil
- 1/4 cup of water
- 1/4 tsp of ground cumin
- 2 tbsps of chopped fresh parsley
- 2 tbsps of chopped fresh cilantro
- 2 tbsps of chopped fresh basil
Preparation:
- In a blender, combine the peeled and chopped tomatoes, cucumber, red onion, green bell pepper, garlic, bread pieces, olive oil, water, parsley, cilantro, basil, and ground cumin.
- Season with salt and freshly ground black pepper. Blend until smooth.
- Transfer the mixture to a bowl, cover, and refrigerate for at least 2 hours to enhance the flavors.
- Serve the cold soup in bowls and garnish with fresh basil leaves.
