
Pomegranate & Apple Salad
Bet this will be your new favorite salad! Fresh leafy greens, juicy pomegranate seeds, crunchy apple pieces, and a refined vinaigrette — that’s how you create a perfect autumn salad.
Ingredients:
For the dressing
- 3 tbsp white wine vinegar or plain rice vinegar
- 6 tbsp sugar
- 1/2 tsp coarse sea salt
- 1/2 tsp Dijon mustard
- 1/4 to 1/3 cup finely chopped SanLucar onion (about 1/2 small onion)
- 1/2 cup SanLucar Natura Pura olive oil
- 1 3/4 tsp poppy seeds
For the salad:

For the dressing:
- Mix vinegar, sugar, salt, mustard, and onion in a blender until well combined.
- With the blender running, slowly drizzle in the olive oil until the dressing emulsifies.
- Pour the dressing into a jar or carafe, add poppy seeds, and shake well.
For the salad:
- Place the lettuce in a large bowl or on a serving platter.
- Top with pomegranate seeds and apple pieces.
- Drizzle with about 1/4 of the poppy seed dressing and gently toss.
- Serve the remaining dressing on the side.
