Tomato-Mozzarella Baked Potato Cakes

  1. Grate the potatoes, carrot, and onion. In a bowl, mix with the egg, flour, salt, and pepper.

  3.  Place the cakes on a plate or toast base. Top with arugula, halved cherry tomatoes, and heart-shaped mozzarella.
