Burrito with Avocado and Tomato

Ingredients:
- 1 burrito tortilla
- 1 diced SanLucar tomato
- 1/4 cup diced SanLucar cucumber
- 1/4 cup diced SanLucar onion
- 1/2 SanLucar avocado, peeled and diced
- 1/2 cup cooked black beans
- 1/2 cup cooked rice
- 1/2 tsp ground cumin
- 1/2 tsp chili powder
- Salt to taste
- 2 tbsp shredded cheese (cheddar or Monterey Jack)
- Salsa, guacamole, or sour cream for serving (optional)
Preparation:
- Dice the tomato, cucumber, onion, and peeled avocado, then place them in a bowl.
- Add the cooked black beans and rice, then mix well.
- Season with cumin, chili powder, and salt.
- Lay the burrito tortilla flat on a plate and sprinkle with shredded cheese.
- Spread the vegetable-bean-rice mixture evenly over the tortilla.
- Fold the burrito securely so it can be easily held.
- Serve with salsa, guacamole, or sour cream if desired. Enjoy!
