Colorful Quinoa Bowl Rezept
The best things come from nature – just like our creamy avocados, refreshing cucumbers, and all the other delicious ingredients in this tasty Quinoa Bowl. Give it a try!
Ingredients:
- 1/2 cup quinoa
- 100g SanLucar broccoli florets
- 1 sweet potato, peeled and diced
- 1 SanLucar avocado, peeled and diced
- 75g SanLucar cherry tomatoes, halved
- 1/2 SanLucar cucumber, diced
- 1 tbsp SanLucar Natura Pura extra-virgin olive oil
- 1 tbsp lemon juice
- 1/4 cup tzatziki
- 1/4 cup fresh parsley, chopped
- Salt and freshly ground black pepper
Preparation:
- Bring quinoa to a boil with twice the amount of water, then let it simmer for 15 minutes. You can season the water with salt, spices, or broth.
- Once the quinoa is tender, drain any excess water and let it cool for 15 minutes.
- Transfer the cooled quinoa to a bowl and mix it with olive oil, parsley, and lemon juice. Season with salt and pepper.
- Add the broccoli florets, diced sweet potato, avocado, diced cucumber, and halved cherry tomatoes.
- Top with a dollop of tzatziki.
