
Tomato-Mozzarella Baked Potato Cakes
Amore, amore! These Italian-style potato cakes, topped with sun-ripened tomatoes, spicy arugula, and heart-shaped mozzarella, are a true expression of love.
Ingredients:
- 3 large SanLucar potatoes
- 1 small carrot
- 1 SanLucar onion
- 1 egg
- 2 tbsp flour
- Salt & pepper
- SanLucar olive oil for frying
Topping:
- SanLucar cherry tomatoes, halved
- Fresh arugula
- Heart-shaped mozzarella pieces
- Tomato-mozzarella seasoning (oregano, basil, salt, pepper)
- A drizzle of SanLucar olive oil
Preparation:
- Grate the potatoes, carrot, and onion. In a bowl, mix with the egg, flour, salt, and pepper.
- Heat SanLucar olive oil in a pan. Spoon the mixture into the pan and flatten slightly to form small cakes. Fry on both sides until golden brown and crispy.
- Place the cakes on a plate or toast base. Top with arugula, halved cherry tomatoes, and heart-shaped mozzarella.
