Mandarin Cake.
Ingredients:
- 3 SanLucar mandarins
- 200 g flour
- 1 tsp baking powder
- 1 tbsp olive oil
- 175g caster sugar
- 3 eggs
- 2 tbsp honey
- 1 cup milk
- 1 cup mandarin juice
- 75g melted butter
- 100g brown sugar
- 1 SanLucar mandarin
- 1/4 cup mandarin juice
- 1/4 cup whipped cream
Preparation:
- Place flour and baking powder in a bowl and mix together.
- In a separate bowl, beat butter with olive oil, sugar and grated mandarin peel using a whisk.
- Next, add the eggs and honey and stir well.
- Add milk and mandarin juice to the mixture and mix well.
- Combine the flour with this mixture and pour it into a baking pan. Draw a line in the middle of the pan using a knife.
- For the glaze: Mix together butter, brown sugar, mandarin juice and whipped cream.
- Finally, decorate the mandarin cake with this glaze and enjoy the sweet-tangy taste of summer.
