Peach cake with vanilla ice cream.
Ingredients:
For 6 servings:
- 450g SanLucar flat peaches
- 1/8 cup brown sugar
- 1 tbsp granulated sugar
- 1 tbsp cornstarch
- ½ teaspoon lemon juice
- 1 tsp vanilla extract
Ingredients for the Dough:
- 1/2 cup all-purpose flour
- ¼ cup granulated sugar
- 1 tsp baking powder
- 3/8 cup milk
- 3 tsp melted butter
- 1 tsp vanilla extract
Topping:
- Vanilla ice cream
Preparation:
- Wash the flat peaches and cut them into small pieces using a knife.
- To prepare the peach layer, place the peach pieces in a bowl. Then add brown sugar, granulated sugar, and cornstarch.
- Add the lemon juice and vanilla extract to the bowl as well, and gently mix everything using a spoon.
- In another bowl, prepare the batter by combining flour, sugar, and baking powder.
- Add milk, melted butter, lemon juice, and vanilla extract to the batter, and whisk the mixture using a whisk until all ingredients are well combined.
- First, add the prepared peach layer, followed by the batter, into a baking pan. Then, bake at 176°C (350°F) for 50-55 minutes.
- Allow the finished cake to cool briefly, and then decorate it with vanilla ice cream before serving, according to your preference. Your fruity and refreshing peach cake is ready!
