Peach cake with vanilla ice cream.

Ingredients:

For 6 servings:

  • 450g SanLucar flat peaches
  • 1/8 cup brown sugar
  • 1 tbsp granulated sugar
  • 1 tbsp cornstarch
  • ½ teaspoon lemon juice
  • 1 tsp vanilla extract

Ingredients for the Dough:

  • 1/2 cup all-purpose flour
  • ¼ cup granulated sugar
  • 1 tsp baking powder
  • 3/8 cup milk
  • 3 tsp melted butter
  • 1 tsp vanilla extract

Topping:

  • Vanilla ice cream

Preparation:

  1. Wash the flat peaches and cut them into small pieces using a knife.
  2. To prepare the peach layer, place the peach pieces in a bowl. Then add brown sugar, granulated sugar, and cornstarch.
  3. Add the lemon juice and vanilla extract to the bowl as well, and gently mix everything using a spoon.
  4. In another bowl, prepare the batter by combining flour, sugar, and baking powder.
  5. Add milk, melted butter, lemon juice, and vanilla extract to the batter, and whisk the mixture using a whisk until all ingredients are well combined.
  6. First, add the prepared peach layer, followed by the batter, into a baking pan. Then, bake at 176°C (350°F) for 50-55 minutes.
  7. Allow the finished cake to cool briefly, and then decorate it with vanilla ice cream before serving, according to your preference. Your fruity and refreshing peach cake is ready!
