Red lentils with herbs.
Ingredients:
- 1 shallot
- 1 tablespoon of olive oil
- 150 g red lentils
- 1 dash of white wine
- 400 ml of water
- Salt and pepper
- 1 pinch of anise powder
- 1 SanLucar tomato
- 50 g SanLucar herbs: basil, bay leaf, oregano, rosemary, thyme, parsley
Preparation:
- Finely chop the shallots and sauté in olive oil.
- Add lentils.
- Add white wine and top up with water.
- Season with a pinch of salt, pepper and anise powder and simmer for about 15 minutes until the lentils are soft.
- Place the tomato into boiling water briefly and skin.
- Dice the fruit. Finely chop the herbs.
- Add tomatoes and herbs to the lentils and taste.
- This is served with fried sea bass or pike-perch fillet.
