Roasted Vegetable Soup

This soup is perfect for warming up when the weather outside is unpleasant. Our oven-roasted vegetable soup is easy to prepare and a true comfort for the soul. Give it a try!

Ingredients:

Preparation:

  1. Wash and cut all the vegetables, place them on a baking sheet, and drizzle generously with SanLucar Natura Pura premium olive oil.
  2.  Season with salt, pepper, and vegetable seasoning.
  3. Roast in the oven at 180°C (356°F) for about 40 minutes.
  4. Transfer the roasted vegetables to a blender, add some vegetable broth and a little more olive oil, and blend until smooth to form a soup.
  5.  Serve the soup topped with a drizzle of balsamic glaze, a splash of cream, and toasted pine nuts. Enjoy!
