
Roasted Vegetable Soup
This soup is perfect for warming up when the weather outside is unpleasant. Our oven-roasted vegetable soup is easy to prepare and a true comfort for the soul. Give it a try!
Ingredients:
- 1 SanLucar zucchini
- 3 small red SanLucar onions
- 2 garlic cloves
- 1 medium light SanLucar onion
- 2 carrots
- 4 SanLucar Caprese tomatoes
- 250g SanLucar Fiesta tomatoes (red and yellow)
- SanLucar Natura Pura premium olive oil
- Salt and pepper
- Vegetable seasoning mix
- Vegetable broth
- Cream
- Balsamic glaze
- Pine nuts
Preparation:
- Wash and cut all the vegetables, place them on a baking sheet, and drizzle generously with SanLucar Natura Pura premium olive oil.
- Season with salt, pepper, and vegetable seasoning.
- Roast in the oven at 180°C (356°F) for about 40 minutes.
- Transfer the roasted vegetables to a blender, add some vegetable broth and a little more olive oil, and blend until smooth to form a soup.
- Serve the soup topped with a drizzle of balsamic glaze, a splash of cream, and toasted pine nuts. Enjoy!
