
Shrimp Ceviche
This tasty shrimp ceviche with our creamy avocado and refreshing lime and lemon juice is the perfect dinner. Light and delicious!
Ingredients:
- 450g shrimp, peeled and deveined
- 1/2 cup freshly squeezed juice of a SanLucar lemon
- 1/2 cup freshly squeezed juice of a SanLucar lime
- 1/2 SanLucar red onion, finely diced
- 1 SanLucar cucumber, peeled and diced
- 2 SanLucar tomatoes, peeled and diced
- 1 SanLucar green pepper, peeled and diced
- 1/4 cup fresh cilantro, chopped
- 1/4 cup fresh mint, chopped
- 1 cup fish stock
- Salt and freshly ground black pepper
- 1 SanLucar avocado, diced
Preparation:
- Heat a pan over medium heat and lightly sauté the shrimp until they turn pink and slightly golden. Let them cool and transfer to a bowl.
- Add the finely chopped red onion, cucumber, tomatoes, and green pepper to the shrimp.
- Season with salt, black pepper, cilantro, and mint.
- Dice the avocado by scoring the flesh and scooping it out. Add it to the shrimp mixture.
- Pour the freshly squeezed lemon and lime juice over the mixture, then add the fish stock.
- Gently mix everything together and let it marinate in the fridge for 30 minutes to allow the flavors to meld.
- Garnish with additional cilantro and serve chilled. Enjoy!
