Stuffed summer tomatoes.
Ingredients:
- 4 SanLucar tomatoes
- 50 g semi-mature Gouda
- 2 hard boiled eggs
- 4 tsp. low-fat mayonnaise
- 1 sprig of SanLucar parsley
- Salt & pepper
- 1 tsp. vinegar
Preparation:
- Cut off the top of the tomatoes and place the lid aside.
- Hollow out the tomatoes and turn them upside down to drain. Cut the flesh into small pieces. Dice the cheese and eggs.
- Mix this all with mayonnaise and season with salt, pepper and vinegar. Mix in finely chopped parsley.
- Fill the tomatoes, put the lid back on and serve.
